Tandoori vs Curry: What’s the Difference and Which Should You Order?

vegetable tandoor side with local rice and homemade chutneys

You open an Indian restaurant menu and see Chicken Tikka under the tandoori section, then Butter Chicken, Rogan Josh and Goan Fish Curry somewhere else.

Which one should you order?

The simplest difference between tandoori vs curry is not spice level. It is how the dish is built.

Tandoori food gets much of its character from high-heat cooking, which can create charred edges, roasted aromas and a firmer exterior.

Curry is a much broader term, but on restaurant menus it commonly describes dishes where sauce or gravy plays a significant role.

There is also an important detail that gets overlooked: the two are not always completely separate.

Chicken Tikka Masala is a perfect example. The chicken can first develop grilled character before being served in a curry gravy. At Pesona Lounge Ubud, our Chicken Tikka Masala uses fire-kissed grilled chicken in a bold tomato gravy. Pesona Lounge Ubud

So the useful question is not simply “tandoori or curry?”

It is:

Do you want the fire and texture of the ingredient to lead, or do you want the sauce to play a bigger role?

What Is Tandoori Food?

The word tandoori refers to food associated with cooking in a tandoor, a cylindrical oven traditionally used at very high temperatures.

Meat and vegetables can be lowered into the oven on skewers, while breads such as naan are traditionally cooked against its hot inner wall. The intense heat helps create the browned, lightly charred exterior people often associate with tandoori cooking. MICHELIN Guide

Marination is also important.

Yoghurt and spices are frequently used before cooking meat, fish, paneer or vegetables. The marinade contributes flavour before the ingredient reaches the heat rather than relying on a sauce added afterwards.

That creates a very different eating experience from a curry.

At Pesona Lounge Ubud, the current Tandoori Grill section includes Chicken Tikka, Lamb Seekh, Fish Tikka Achari and a Veg Tandoor Plate. Pesona Lounge Ubud

Our Chicken Tikka is yoghurt-marinated chicken grilled over fire.

Lamb Seekh uses spiced minced lamb cooked over flame.

Fish Tikka Achari combines seasonal white fish with tangy achar pickling spice.

The Veg Tandoor Plate uses yoghurt-spiced vegetables and paneer.

What connects them is not one particular spice blend. It is the emphasis on grilled flavour and texture.

For a deeper look at this style of cooking, our guide to traditional Indian cooking methods explains tandoor cooking alongside tadka, dum cooking, marination and slow simmering.

What Do We Mean by Curry?

“Curry” is trickier.

It is not one Indian recipe or one flavour.

The word has become an international umbrella term for a huge range of seasoned dishes, often involving a sauce or gravy. Historically, the English term developed from the Tamil kari, associated with sauce or relish, and eventually became much broader than any single Indian preparation. Wikisource

That is why asking:

“What does curry taste like?”

is a bit like asking:

“What does pasta taste like?”

There is too much variation for one answer.

Just look at the current Pesona menu.

Burrata Butter Chicken is built around creamy richness.

Chicken Curry Madras uses coconut milk and curry leaves.

Lamb Vindaloo moves toward chilli, vinegar and heat.

Lamb Rogan Josh is slow-braised with warm fragrant spices.

Goan Fish Curry is lighter and tangier, with coconut.

And vegetarian curries range from silky Mung Dal Tadka to chickpea-based Chole Masala and dark leafy Saag Paneer. Pesona Lounge Ubud

They are all found in the curry sections of the menu, but they do not give you the same meal.

That is why ordering Indian food becomes much easier once you stop treating “curry” as a flavour.

Tandoori Is a Technique. Curry Is a Much Broader Category.

This is probably the most useful distinction in the entire article.

Tandoori describes how food is cooked much more directly than curry does.

When someone says Chicken Tikka, the cooking method tells you something about what to expect: marination, intense heat and grilled character.

When someone says curry, you still need more information.

Which curry?

Butter Chicken?

Madras?

Vindaloo?

Rogan Josh?

Goan Fish Curry?

Those names tell you much more about what will actually arrive at the table.

This is also why Indian cuisine cannot really be divided into only “tandoori food” and “curry.”

The categories can overlap.

Chicken Tikka Masala Shows Where the Two Meet

Chicken Tikka Masala is useful because it demonstrates exactly why Indian curry vs tandoori is not always a clean either-or comparison.

First, there is tikka: pieces of chicken with grilled character.

Then there is masala gravy.

At Pesona Lounge Ubud, the dish combines fire-kissed grilled chicken with bold tomato gravy. Pesona Lounge Ubud

That means you can get some of the texture and roasted flavour associated with grilled chicken while still having a sauce to eat with rice or naan.

If you like the idea of tandoori-style meat but do not want to give up curry gravy completely, dishes built this way can provide a useful middle ground.

Which Has More Sauce?

Usually, the answer is straightforward.

If you order something from a tandoori grill section, expect the ingredient itself to be more visible and the dish to rely less on a surrounding gravy.

Curry places much more emphasis on sauce.

That changes how you eat it.

A piece of Chicken Tikka can be eaten with its accompanying chutney and rice, while Burrata Butter Chicken invites you to mix the gravy with rice or scoop it with bread.

Neither format is better.

They simply create different meals.

If what you really enjoy is dragging a piece of naan through a generous curry sauce, ordering a dry grilled dish and expecting the same experience will probably leave you disappointed.

Which One Is Smokier?

Tandoori or flame-grilled dishes are generally the direction to explore when you want roasted and charred notes.

The high heat affects the outside of the ingredient directly.

Curries develop flavour differently.

A curry may get depth from simmering, reducing a gravy, frying aromatics, tempering spices, adding coconut, using dairy or slowly cooking meat.

Those flavours can be deep without necessarily tasting smoky.

So if what you really mean when you say:

“I want something with a barbecue-like character”

look toward the tandoori section before automatically choosing a curry.

Our guide to Indian grilled dishes and tandoori-style food goes deeper into that side of Indian cooking.

Which One Is Spicier?

Neither.

At least, not automatically.

Tandoori does not mean mild. Curry does not mean hot.

Chilli level depends on the marinade, spice mixture, sauce and individual recipe.

This distinction matters because international diners sometimes use “spicy” to mean two different things:

food containing many spices,

and food containing enough chilli to produce noticeable heat.

Those are not the same thing.

On Pesona's current menu, for example, Lamb Vindaloo is explicitly described as fiery, while Burrata Butter Chicken is described around richness and creaminess. Both are curries. Pesona Lounge Ubud

So choosing curry tells you almost nothing about chilli level by itself.

The same logic applies to grilled food.

If heat is important to you, ask about the individual dish rather than trying to predict it from whether it is tandoori or curry.

Our guide to how spicy Indian food really is explains that distinction in more detail.

Is Tandoori Food Lighter Than Curry?

Sometimes it can feel lighter, but it is better not to turn that into a nutrition rule.

A grilled dish without a rich gravy can feel less heavy than a creamy curry.

But that does not mean every tandoori dish is automatically lower in calories, lower in fat or “healthier.”

Marinades vary.

Portions vary.

Paneer is different from vegetables.

Lamb is different from fish.

What you eat alongside the dish also matters.

A better reason to choose tandoori food is:

you want less sauce and more grilled texture.

Choose a curry when:

you want the sauce to be an important part of the meal.

That is a much more reliable way to use the menu.

What Should You Order If You Usually Like Grilled Food?

Start with the tandoori side.

If you normally gravitate toward barbecue, grilled chicken, skewers or roasted vegetables, Chicken Tikka, Lamb Seekh or Fish Tikka Achari will probably make more intuitive sense than starting with a rich curry.

Chicken Tikka is especially useful for understanding the difference because there is no curry sauce hiding the effect of the grilling.

Pesona's menu describes it simply as “All flame, no sauce.” Pesona Lounge Ubud

That tells you what the dish is trying to do.

What Should You Order If You Love Sauce?

Start with curry.

But then decide what kind of sauce you actually want.

For creamy and rich, Burrata Butter Chicken moves in one direction.

For coconut and curry leaves, Chicken or Lamb Madras is different.

For tangy coconut and fish, Goan Fish Curry changes the experience again.

For chilli and vinegar, Lamb Vindaloo is intentionally much hotter.

This is why our Indian food in Ubud guide encourages first-time diners to choose according to flavours and textures rather than assuming every Indian curry will taste similar.

What About Vegetarian Diners?

Both sides of the menu can work.

If you want grilled texture, the Veg Tandoor Plate combines yoghurt-spiced vegetables and paneer.

If you want curry, there is much more variety: Mung Dal Tadka, Vegetable Curry, Aloo Gobi, Dal Makhani with Burrata, Saag Paneer, Saag Aloo, Chole Masala and Paneer Masala are currently listed. Pesona Lounge Ubud

There is one important dietary distinction here.

The Veg Tandoor Plate contains yoghurt and paneer, so vegetarian does not mean vegan.

The same caution applies to dishes using paneer, burrata, yoghurt, butter or ghee elsewhere on an Indian menu.

If you are vegan or dairy-free, ask about the specific preparation rather than assuming a vegetable-based dish automatically fits your diet.

Should You Choose Naan or Rice?

This decision also changes slightly depending on what you order.

Curries naturally give rice and naan something to absorb or scoop.

At Pesona Lounge Ubud, the current curry sections already come with local rice, so you do not need to automatically order more rice. Pesona Lounge Ubud

Adding one naan can instead give the meal another texture.

Butter Naan is relatively simple and soft.

Garlic Naan adds more savoury aroma.

Richer stuffed breads such as Garlic & Cheese Naan or Keema Lamb Naan contribute much more to the meal, so consider what else you have ordered before adding them.

Tandoori Grill dishes at Pesona are also currently served with local rice and house chutneys. Pesona Lounge Ubud

So again, check what is already included before ordering several additional sides.

Our guide to how to eat naan with curry goes into the pairing side in more detail.

Ordering for Two? One of Each Can Make More Sense

If two people are sharing dinner, you do not necessarily have to choose between tandoori and curry.

Ordering one of each can create more contrast than ordering two similar curries.

One dish gives you grilled texture.

The other gives you sauce.

You can then add bread only if you want another texture, especially because both the curry and Tandoori Grill sections at Pesona currently include rice. Pesona Lounge Ubud

For example, a grilled dish alongside a curry usually teaches a first-time diner more about Indian cooking than ordering two tomato-based curries that occupy similar territory.

The important thing is not to collect as many dishes as possible.

It is to make each dish contribute something different.

Tandoori vs Curry: Which Should a First-Time Diner Choose?

Choose tandoori first if you:

already enjoy grilled or barbecued food,

prefer the ingredient itself to remain the focus,

want more char and texture,

or do not particularly want a lot of sauce.

Choose curry first if you:

love sauces and gravies,

want something to mix with rice or scoop with naan,

enjoy slow-developed flavours,

or want to explore very different flavour profiles within one category.

And if both descriptions sound good, there is no need to choose.

One grilled dish and one curry can be one of the easiest ways to understand why Indian food is much broader than the stereotype of “everything is curry.”

Tandoori and Curry at Pesona Lounge Ubud

dal tadka and vegetable curry side with local bali rice

At Pesona Lounge Ubud, the choice is particularly easy to see on the current menu.

The Tandoori Grill section focuses on Veg Tandoor Plate, Chicken Tikka, Lamb Seekh and Fish Tikka Achari, served with local rice and house chutneys.

The curry sections move across very different styles, from Burrata Butter Chicken and Chicken Tikka Masala to Madras, Vindaloo, Rogan Josh, Goan Fish Curry, dal, chickpea and paneer dishes. Pesona Lounge Ubud

That means you do not need to come to an Indian restaurant in Ubud already knowing traditional dish names.

Start with a preference you already understand.

Want fire, char and grilled texture? Explore tandoori.

Want sauce, rice and something to scoop with naan? Explore curry.

Want both? Build the table around contrast.

Once you understand that difference, a long Indian menu becomes much easier to navigate.

Frequently Asked Questions

What is the main difference between tandoori and curry?

Tandoori primarily refers to a high-heat cooking style associated with a tandoor oven and grilled or roasted character. Curry is a much broader term commonly used for seasoned dishes in which a sauce or gravy may play an important role.

Is tandoori food a curry?

Not necessarily. Chicken Tikka, for example, can be served as a grilled dish without curry gravy. However, grilled tikka can also become part of a curry, as with Chicken Tikka Masala.

Is tandoori food spicy?

It can be heavily spiced without necessarily being hot from chilli. Heat depends on the individual marinade and recipe rather than the word “tandoori.”

Is curry always spicy?

No. Curries can be creamy, aromatic, tangy, coconut-based or intentionally fiery. “Curry” alone does not tell you the chilli level.

Which is better for someone who does not like creamy food?

A tandoori dish can be a good place to start because it does not depend on a creamy gravy. But there are also curries that are not creamy, including coconut-based or other lighter styles.

Can vegetarians order tandoori food?

Yes. Pesona Lounge Ubud currently offers a Veg Tandoor Plate with yoghurt-spiced vegetables and paneer. Because it contains dairy, it should not automatically be considered vegan. Pesona Lounge Ubud

Should I order tandoori and curry together?

They can work very well together because they introduce different textures and cooking styles. For sharing, one grilled dish and one curry can provide more contrast than ordering two similar curries.
